Simple Chicken Noodle Soup Recipe

Do you like homemade chicken noodle soup but think it takes too long to make? Check out the recipe below that will have you eating chicken noodle soup in under one hour!

‘Tis the season as they say for illness. My son woke up with a bug the other morning…ugh! He asked me if he could have chicken noodle soup for lunch if he was feeling well enough to eat. I said yes and headed to the grocery store to get ‘sick food’ as we call it in our house. Usually I am good about having ‘sick food’ items handy at all times during the cold/flu season but given we had just gotten through the holidays we did not have much in way of the BART diet handy.

My ‘sick food’ list includes the following:

  • Citrus (my family loves mandarins, clementines, and naval oranges)
  • Celery
  • Carrots
  • Onion
  • Garlic
  • Russet Potatoes (for baked potatoes)
  • Rotisserie Chicken
  • Two boxes of Chicken Stock
  • Better than Bouillon (or bouillon cube)
  • Egg Noodles
  • Saltine Crackers
  • Pretzel Sticks
  • Peanut Butter
  • Rice
  • Apple Sauce
  • Coconut Water
  • Apple Juice
  • Organic Gatorade
  • Ginger ale
  • Organic Popsicles
  • Bread (for toast)

I love to make homemade chicken noodle soup when anyone gets sick. I think it is such a good meal to provide nourishment and it is comforting too! My kids LOVE homemade chicken noodle soup. My Dad and Mother in Law make amazing chicken soups and I always feel bad when I open a can, although sometimes we just have to do that! I adapted a number of recipes so that I can make chicken noodle soup quickly, the kids love it and it IS homemade!

Note: I like to make mine in the Instant Pot making it that much quicker and it’s easy clean-up too. If you don’t have an Instant Pot no worries! You can make this recipe on the stove, in a crock pot or instant pot. Anything works!

Simple Chicken Noodle Soup Recipe
Ingredients:
  • 1 T Good Olive Oil
  • 2-3 Cloves of Garlic, minced
  • 1 Medium Size Onion, diced
  • 2-3 Carrots, sliced
  • 2-3 Stalks of Celery, sliced
  • 8 Cups of Chicken Broth
  • 2 T Boullion
  • 2 Cups Water
  • One Rotisserie Chicken Shredded (remove all skin/bones)
  • Salt & Pepper to Taste
  • Egg Noodles
Directions:

Add one tablespoon of Olive Oil in soup pot on Medium-High heat (if Instant Pot set to Sauté, if using crock pot you will need to sauté the veggies on the stove top in a skillet and then transfer). Once the oil is ready add the garlic and onion and stir often to avoid burning the garlic, approximately one minute. Add the carrots and celery and stir often until the vegetables soften, about 3 minutes. Add eight cups of chicken broth (two boxes), two tablespoons of bouillon and two cups of water. If this is too much liquid for your container then cut back. Stir well. Add the shredded rotisserie chicken to the pot. Season with salt and pepper.

If using the Instant Pot, put on the lid, set to seal and use the Soup Setting (15-30 minutes, since the chicken is already cooked 15 minutes is fine, I do mine for 30 minutes when time allows for a more flavorful soup). If you are using the stove top bring the soup to a boil and then lower heat and cover for 30 minutes – 1 hour. Stirring occassionaly. If using the crock pot you can set on low for 4 hours.

Before serving, bring a pot of salted water to a boil. Cook the egg noodles according to the package instructions. Add noodles to the soup bowls. Ladle the chicken soup on top of the noodles.
